Get Up and Go Porridge

This is basically super oatmeal and one of our favorite winter breakfasts.

  • 1-1/2 cups quick oats
  • 3 cups cold water
  • 1/4 teaspoon cinnamon
  • 1/8 teaspoon nutmeg

Add all ingredients to a small saucepan. Cover and bring to a boil at high heat. Once it boils turn off heat, stir, cover and let stand for 4 minutes (We prefer ours porridge style, which is less thick and pasty than traditional oatmeal. If you prefer your oats more firm, boil water first, then add oats). This makes four generous servings.

Now, for the fun part. In our house, porridge is simply a transport vehicle to host lots of other goodies. Here are some of our favorites.

When we shut off the heat we often add diced fresh fruit, like apples, bananas or pears. Dried fruit, such as raisins or cherries work well too. Sometimes we’ll toss in some frozen blueberries or raspberries to cool down the temperature a bit. If fresh fruit isn’t available, then a dollop of our favorite Food For Thought preserves may find its way in.

Once it is served in the bowl, we’ll often top with any combination of the following: fresh fruit or berries, a dollop of yogurt or apple sauce, chopped walnuts or almonds and always flax seed and maple syrup.
