This was one of the first wildcrafted items I created as a hobbyist wildcrafter thanks to an inspiration from my sculptor friend Rod Bearup. Wild leeks, sometimes called Ramps grow prolifically in our certified organic forest. They are the first thing to pop out of the ground in the spring and by late may the bulbs are ready for harvesting. Use these like you would a cocktail onion or as a garnish to just about any dish. I like them right out of the jar with a cold glass of ale. And when you are done, don't waste the liquid in the jar. Simply mix it with a few tablespoon of olive oil for a wonderful Wild Leek Vinaigrette.
